Description

These Carnivore Bagels are chewy on the outside, soft on the inside, and made with simple animal-based ingredients. They’re perfect for breakfast sandwiches, burgers, or meal prep, offering a satisfying zero-carb alternative to traditional bagels without sacrificing texture or flavor.

Ingredients

- 2 cups (225 g) low-moisture mozzarella cheese, shredded
- 2 oz (56 g) full-fat cream cheese
- 2 large eggs, room temperature
- 1 tsp baking powder (optional, for a lighter texture)
- 1/4 tsp sea salt
- 1 tbsp everything bagel seasoning (optional, for topping)
- 1 egg, beaten (optional, for egg wash)

Instructions

1. Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
2. Melt the mozzarella and cream cheese together in the microwave or over a double boiler until smooth.
3. Stir until fully combined, then let cool slightly.
4. Add the eggs, baking powder, and salt. Mix until a smooth dough forms.
5. Divide the dough into 6 equal portions.
6. Roll each portion into a rope and join the ends to create a bagel shape.
7. Place on the prepared baking tray.
8. Brush with egg wash and sprinkle with everything bagel seasoning if desired.
9. Bake for 20–25 minutes, or until golden brown and firm.
10. Allow the bagels to cool on a wire rack for at least 15 minutes before slicing.

Notes

– Use low-moisture mozzarella for the best chewy texture.
– Fresh mozzarella contains too much moisture and can create a soft, dense dough.
– Cooling completely helps the crumb finish setting.
– Store refrigerated for up to 5 days.
– Freeze for up to 3 months and toast directly from frozen.
