Description

Moist, fudgy zucchini brownies made with just 3 ingredients. Naturally vegan, paleo, and keto-friendly.


Ingredients

Scale
  • 1½ cups grated zucchini (squeezed dry)

  • ½ cup unsweetened cocoa powder

  • ½ cup sugar-free nut butter (almond or peanut)



Instructions

  1. Grate zucchini and squeeze out excess moisture.

  2. Mix zucchini with cocoa powder until combined.

  3. Add nut butter and mix into a thick batter.

  4. Press into a lined pan.

  5. Chill 1 hour or bake at 180°C (350°F) for 20 minutes.


Notes

  • Chill for a fudgier texture.

  • For keto, use almond butter only
