Description

Ingredients

  • 12 large Medjool dates (pitted)

  • 1/3 cup crunchy peanut butter (or smooth peanut butter + 3 tbsp crushed roasted peanuts)

  • 1/2 cup dark chocolate chips or chopped dark chocolate bar (70% cocoa or higher)

  • Optional: 1/2 tsp flaky sea salt (for topping)


Instructions

  • Flatten the Dates: Slice your dates lengthwise to remove the pits. On a sheet of parchment paper, arrange the dates close together in a neat rectangle, slightly overlapping them. Place another piece of parchment paper on top and press down firmly using your hands or the flat bottom of a glass until the dates form a single, flat, cohesive sheet.

  • Layer the Filling: Remove the top layer of parchment paper. Spread an even layer of peanut butter across the flattened dates. If using smooth peanut butter, sprinkle your crushed roasted peanuts evenly over the top now.

  • Roll It Up: Using the edge of the bottom parchment paper to assist you, carefully roll the date sheet tightly into a compact log (similar to rolling a sushi roll).

  • Coat and Freeze: Melt your dark chocolate in the microwave in 30-second bursts, stirring in between until completely smooth. Pour the melted chocolate evenly over the date log until it is fully coated. Optional: Sprinkle flaky sea salt on top of the wet chocolate. Place the log in the freezer for 15 to 20 minutes until the chocolate shell has set.

  • Slice and Serve: Once the chocolate is firm, use a sharp chef’s knife to slice the log into bite-sized rounds. Enjoy immediately or store in the freezer.

Fixing Dry Dates: If your dates feel a bit stiff or dry, soak them in warm water for 5 to 7 minutes, then pat them completely dry with a paper towel before flattening. This restores their pliability.
