Ingredients
- 2 bags (16 oz each) frozen cauliflower florets
- 1 container (16 oz) low fat cottage cheese
- 2 tablespoons organic cheddar cheese powder (no fillers)
Optional Additions:

- Onion powder to taste
- Shredded cheddar cheese for topping
Instructions
- Preheat oven to 350°F (175°C).
- Prepare cauliflower: Pour both bags of frozen cauliflower directly from freezer into a baking dish or roasting pan. Place in preheated oven to defrost while you prepare the sauce (15-20 minutes).
- Make cheese sauce: Add entire container of cottage cheese and cheddar cheese powder to a small blender. Blend until completely smooth and creamy with no lumps (30-60 seconds).
- Combine: Remove defrosted cauliflower from oven. Pour cheese sauce over cauliflower and mix thoroughly to coat all florets.
- Bake: Either continue baking in the same dish OR portion into individual ramekins. Bake for an additional 20 minutes or until cauliflower is tender and sauce is bubbling.
- Optional: Add garlic powder, onion powder, or top with shredded cheddar cheese before final baking.
