Description

  • 2 bags (16 oz each) frozen cauliflower florets
  • 1 container (16 oz) low fat cottage cheese
  • 2 tablespoons organic cheddar cheese powder (no fillers)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare cauliflower: Pour both bags of frozen cauliflower directly from freezer into a baking dish or roasting pan. Place in preheated oven to defrost while you prepare the sauce (15-20 minutes).
  3. Make cheese sauce: Add entire container of cottage cheese and cheddar cheese powder to a small blender. Blend until completely smooth and creamy with no lumps (30-60 seconds).
  4. Combine: Remove defrosted cauliflower from oven. Pour cheese sauce over cauliflower and mix thoroughly to coat all florets.
  5. Bake: Either continue baking in the same dish OR portion into individual ramekins. Bake for an additional 20 minutes or until cauliflower is tender and sauce is bubbling.
  6. Optional: Add garlic powder, onion powder, or top with shredded cheddar cheese before final baking.
