Description

These incredibly simple yet delicious carnivore burger buns require only 3 ingredients and deliver amazingly fluffy, light results perfect for summer grilling. No gluten, grains, nuts, seeds, or complicated ingredients needed – just eggs, milk powder, and baking powder create these soft, bread-like buns that taste absolutely amazing. Perfect for burgers, hot dogs, sandwiches, or enjoying with butter as a side roll.

Ingredients

Scale
  • 3 large eggs (room temperature preferred)
  • 1½ cups grass-fed goat milk powder (or regular milk powder)

  • 1 tablespoon aluminum-free baking powder

Instructions

  • Prepare: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Whisk eggs: In a medium bowl, whisk eggs until well combined and slightly frothy.
  • Mix dry ingredients: In a separate bowl, thoroughly combine the milk powder and baking powder.
  • Combine: Gradually add the dry mixture to the whisked eggs, about ½ cup at a time, stirring continuously until you achieve a thick “sourdough-like” consistency.
  • Shape: Wet your hands with water to prevent sticking. Roll the batter into 5-6 equal-sized balls and place on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake: Bake for 11-13 minutes or until the tops begin to turn golden brown.

  • Cool: Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Milk Powder Choice: Goat milk powder is easier to digest than cow’s milk powder, but both work excellently
  • Batter Consistency: The batter should be thick enough to hold its shape when rolled but not so thick it’s difficult to work with
  • Storage: Best enjoyed fresh, but can be stored in an airtight container for up to 2 days at room temperature
  • Freezing: Individual buns can be frozen for up to 1 month – thaw at room temperature

  • Serving Suggestions: Use as burger buns, hot dog buns, slice for sandwiches, cube for croutons, or enjoy with butter
